As the weather gets colder we all instinctively want more comforting and rich foods. One of my favorites is gnocchi. Made of freshly baked potatoes, flour, eggs and Parmesan, gnocchi is easy to make, but hard to make right. I'll show you how to mill the still-steaming potatoes, mix in the ingredients, and work the dough to the proper consistency. It needs to be mixed enough to hold up to cooking, but not so much that it gets chewy and dense. When done correctly, these "little pillows" will melt in your mouth, and satisfy you in a way that not much else can. Excited to see you there!
