Roasted Butternut Squash Tostada with Mole

We roast diced butternut squash and place them on freshly made tostadas. Garnished with mole, cotija cheese, and julienned red onion.
Creamy Zucchini Soup Shooters with Sesame
Appetizer
Zucchini is cooked with aromatics and oregano, blended to a creamy consistency and garnished with sesame seeds, thinly sliced radish, and extra virgin olive oil.
Crispy Cilantro Sweet Potato & Chicken Thigh
Entree
Sweet potato and chicken thigh are seared, then roasted. Plated on top of a avocado-tomatillo salsa with cilantro lime extra virgin olive oil. Served with a side of cranberry beans and roasted delicata squash.
Flan de Chocolate
Dessert
Vegan chocolate flan made with dark chocolate, vanilla bean, and piloncillo (mexican brown sugar). Served chilled with toasted peanuts, ancho chile oil, and bruleed grapefruit.
