To follow, Forest walk, home grown oyster mushroom & Espelette to honor the Basque country. Next major stop in Marseille, revisiting a classic often misunderstood: the Aïoli. Before dessert, quick flight over the SE valleys, where necessity & culture brought rich culinary traditions, Duck Confit cooked as it should be. To finish, the Grassland, an ancestral work around milk.
