This tasting menu will feature a bounty of seafood, with highlights from the farmer's market, and cuts from the butcher. A selection of local beer and wine will be provided for the guests to chose from throughout the meal. Please keep in mind that courses change based upon the catch and availability of ingredients and final menu isn't set until the day of the dinner. The following is a guideline of what you might expect.

Trio of Sashimi Dishes
Small Plate
Seared Scallops -pomegranate, persimmon, ponzu, ginger jam. Tuna Tataki -Fuji apples, celeriac mousse, horseradish, charred onion, nato tosa. Octopus -yuzu miso, pickled chili, seaweed salad
Small Plate
Cherry smoked, pickled ginger, red flame grapes, radish, wasabi tobiko, truffled pea shoots.
Striped Bass Carpaccio
Small Plate
Sashimi slices with yuzu kosho, ginger, green onion, soy, citrus, sizzling roasted garlic sesame oil.
Mushroom Dashi
Small Plate
Sake kasu marinated Black cod, mushroom medley, chrysanthemum, okra, sweet corn, pine nut, zest.
Lamb Chop
Turmeric glazed and charred, mango, fennel, sweet peppers, peanut sauce.
Coconut Panna Cotta
Coconut cream, black sesame, Japanese yam, kaffir lime.
