George is a California native with an international upbringing, George Meza's foray into the restaurant world began in Napa Valley working under Hiro Sone at Terra. In 2016, he partnered with
Sunny Simmons and Caroline Smith to oversee the kitchen at their forthcoming urban
bathhouse and restaurant concept, Onsen. Here, George draws on his nuanced
background in Asian flavors to present vegetable-focused small plates complete with layered
flavors and an emphasis on local produce.
