This is down home cooking with a bit of a twist, my famous spicy honey sous vide spare ribs with a more traditional twist to the menu. It's a warm, comforting, and all around feel good dinner for this cooler time of the year.

A light cornmeal batter, seasoned gently then fried until crispy and golden brown on the outside, steamy and tender on the inside - served alongside a warming chipotle dipping sauce.
Spicy Honey Glazed Spare Ribs with Southern Sides
Entree
St. Louis style ribs that have been rubbed for 24 hours, cooked sous vide style for 20 hours, then glazed in the oven with my spicy honey glaze. Enough heat to entice but not to kill.
Pineapple Upside Down Cake with Browned Sour Cream Schmear
Dessert
Rich and decadent is the way to describe this yellow cake with pineapple, maraschino cherries and a rich caramel/butter sauce baked with a "schmear" of sour cream accented with brown sugar and house made vanilla extract to "cut the richness" of the cake.
