This meal that has pork in each course starting with the bacon sampler, to the 16 hour smoked pork shoulder used to fill the angolotti (half moon shaped ravioli) ,to the entree of pork loin garnished with Earl Grey Tea soaked French prunes concluding with a butterscotch budino (Italian style pudding) garnished with crispy pancetta.

A classic Southern dish of cheddar cheese pimento's and Southern charm to take the edge off of your hunger upon arrival
pickled vegetables
Small Plate
A variety of vegetables lightly pickled, crisp with a variety of flavors and textures to ward off the hunger pangs.
A bacon sampler
Small Plate
A trio of bacon; Millionaires, house peppered bacon and sous vide uncured pork belly, a decadent way to start this meal off. Trust me, i won't tell your cardiologist a thing.
Angolotti pasta
Small Plate
Half moon shaped ravioli filled with 16 hour smoked pork shoulder, and braised savoy cabbage, served with a "breadcrumb sauce" from the Italian mountains.
Sous Vide pork loin
Entree
Brined for 24 hours, marinated for 24 hours then slow cooked sous vide style for maximum tenderness, pan seared prior to slicing, garnished with Earl Grey tea soaked prunes, a warm potato salad and a seasonal vegetable will also be on the plate.
Butterscotch budino with crispy pancetta
Dessert
Budino is the Italian version of a pudding and for the close of the meal, i have decided to make them flavored with butterscotch and garnished with crispy pancetta bacon.
