Join Chef Deborah Dal Fovo for her online pasta masterclass dedicated to Springtime and its bounty of seasonal vegetables. This livestream class showcases the Northern Italian culinary masterpiece “Straw and Hay Pasta” {Paglia e Fieno}, a luscious dish made with multicolored green (spinach) and yellow (egg) pasta ribbons tossed in a delicate sauce of sweet peas, savory prosciutto, and light cream. There's no more delicious way to celebrate Spring than with this dish that's perfect for Easter lunch. During the class, Chef Deborah will teach you to make silky spinach and egg pasta doughs from scratch then how to roll into sheets and cut pasta ribbons by hand. Once the pasta is formed into neat nests ready for cooking, Deborah will guide you step-by-step in preparing the sauce and finishing this exquisite dish. NOTE: A pasta rolling machine is preferred but not required and long rolling pin can be used instead. You can also just relax and watch the pasta-making technique and join in as we make the sauce during class to dress good quality store-bought Straw & Hay pasta. You’ll receive an ingredient list to cook along with Chef Deborah or just watch and make the meal later using her recipes. Class cost includes lesson, recipe, and link to recorded video of the class.
