Ellie's is a handmade Italian concept - we use responsibly sourced ingredients and the freshest seafood and meats.
A self-taught chef and culinary mastermind, Joshua Gil is dedicated to using local and seasonal influences to embellish his unique spin on traditional cuisine.
Chef Gil found a passion for artistic cuisine early on in his life, after finding inspiration from culinary classics including Chez Panisse, Le Guide Culinaire, and Los Secretos de El Bulli. Incorporating Mexican, Chinese, Vietnamese and Japanese influences into his cooking, Chef Gil’s impressive career has spanned several restaurants and locations throughout California.
Most recently, Chef Gil co-owned and created the menu for Tacos Punta Cabras in Santa Monica, California. Past career highlights also include earning the first Michelin Star for Joe’s Restaurant in Venice, California and working as chef de cuisine at the exclusive Jonathon Club where he was in charge of monthly wine dinners, the spa dining menu, VIP dining, menu development and management. Chef Gil has also worked Executive Chef at Sunset Strip’s famous BLT Steak and chef de cuisine at Hotel Laguna in Laguna Beach.
Josh is currently back on the mercenary circuit, consulting as well as partnering up with restaurants in Topanga, Thailand, and Valle de Guadalupe. With this freedom to not be tied down to just one stove, he gets to travel throughout the world, cooking private dinners, pop-ups, or giving cooking classes, he feels blessed to be able to explore new ingredients, learn traditional techniques from the areas visited and always making sure to have fun and that anything made with love, is always enjoyed.
