BIO

Hi, I’m Jillian!

TL;DR
I make food at work and cocktails at home. I pet dogs everywhere while quietly trying to smash the patriarchy.

I'm a first generation Filipino-American so I cultivated a love for food and dining at an early age. While pursuing a culinary career, I found myself most inspired by baking and patisserie, so I turned my focus towards becoming a Pastry Chef. As I learned more, I began to teach more, and thusly I found the thing I'm most passionate about: showing other people how easy it is to do what I do. I was fortunate enough to start my career in a Michelin-starred restaurant, Cyrus, where I learned a standard of quality that has threaded my work over the past 15 years. I later learned how to use that standard and develop the skill of high volume production at Bouchon Bakery in New York City, which allowed me to reap the reward of sharing truly special products with a wider audience.

I continued to build my culinary skillset in Houston, where I earned local recognition as the Executive Pastry Chef at Common Bond Cafe & Bakery. In my subsequent role as Pastry Chef at the celebrated Aqui, I applied my baking and pastry skills in a new medium for me: plated desserts. I aimed to showcase my Filipino heritage, which earned me a spot as semi-finalist for the James Beard Foundation’s Pastry Chef of the Year in 2018. In my time at Aqui, I also took on the role as the Executive Sous Chef, where my re-entry into the savory side began.

In 2019, I returned to California leading up to the opening of Sightglass Coffee's March 2020 debut in Los Angeles. In my current role as Executive Chef and Pastry Chef, I oversee Sightglass' café menu experience, as well as the in-house pastry program. My inspiration these days is a simple approach to sharing all of my culinary experiences over the years. Easy, right?

When I'm not working, I like to play with cocktails at home and spend time with my dog, Frank.
