I’ll keep this one short and sweet. I think we all know what crepes are, and how widely they can vary from cook to cook and restaurant to restaurant. However, crepes will ALWAYS have an incredibly special place in my heart. Let me explain why.
If you didn’t already know, I gained my love of cooking from my mom. One of her signature dishes was, without a doubt, her crepes. Every Saturday morning would be a crepe buffet. Stacks of perfect pillowy circles of love, and a variety of toppings for everyone to enjoy. You can imagine that a sleepover at the Sasto household was a prized invitation to score.
Now while you may have your own crepe recipe, or may not even be interested in brunch, that is not the focus here. Instead, the focus is Northern California. The small local communities, farmers, and families have been devastated by rampant wildfires. Some have lost their entire livelihoods. And with a looming pandemic, many do not have anywhere to turn to or anyway to find shelter from the spreading inferno.
100% of the proceeds from this week’s class will be donated to World Central Kitchen’s support and relief efforts by those directly affected by the disaster.

Understanding the why's and how's of a recipe are far more important than a list of amounts and ingredients. A recipe is merely a road map, passed from one cook to the next. What makes a recipe special is the personal touch that each cook imprints on it to make it their own. Having the knowledge of "why" you do something, instead of just reading a recipe card will give you the confidence and skills to carve your own path in the kitchen.
At the end of the lesson, you will feel confident enough to take this recipe and put your own touches on it, truly making it your own.
