Ricotta Gnudi
“Gnudi” - roughly translated from Italian means “naked”. Basically thought to be the delicate filling to pasta, without the pasta. Gnudi are gnocchi-like dumplings made with ricotta cheese instead of potato. The result is a lighter and chessier, "pillowy" dish. Often the simplest things are the hardest. Learn Chef Joe’s secrets and techniques to making a perfect pillow of ricotta gnudi everytime.
Mushroom Marsala
Achieving a golden brown and caramelized roasted mushroom is a fundamental technique that alludes even the most experienced cook. Chef Joe shares his method for extracting maximum flavor from any variety of mushroom, and transforming them into the ultimate pairing for the ricotta gnudi, brown butter marsala sauce.
