The same satisfying and heart-warming nostalgia that is found in the classic, can be rekindled in this Italian speciality - ROTOLO. It is easiest to think of rotolo as a rolled up lasagna. Stuffed with all the best parts of the classic dish, cut into servable slices, and broiled for crispy perfection. No more fighting over the toasted edges! What can be a better filling for such a treat than fresh made ricotta. Chef Joe shares his recipe and favorite techniques for making this “twice cooked” cheese. Luscious fresh ricotta cheese, roasted mushrooms, cheesy fonduta, and perfectly cooked pasta. What more could you ask for? Egg Dough
Not everyone has the time (or energy) to knead dough the old-fashioned way, by hand. Instead, learn a few modern shortcuts and adjustments for how-to let your stand-mixer do all the work for you. This lesson is for all skill-levels, and will be using a KitchenAid stand mixer, the pasta sheeter attachment, and a basic cutting tool. However, do not worry, Joe will go over good substitutions for all of the tools and equipment throughout the demonstration. Prior to the lesson, you’ll receive video links to Chef Joe making the dough with a stand mixer and by hand. You’ll have a personal guide through the entire dough making process. This lesson will require a pasta sheeter or rolling pin.
