We are switching things up for the month of April! Rather than hosting a large, one-way livestream, Chef Joe wanted to make his private, virtual one-on-one (video conferencing) lessons more accessible to everyone. This is your chance to spend some FACETIME directly with Chef Joe, working on your techniques, your dough and pasta making, and asking questions directly in real time! A variety of dates, times, and lesson formats - choose the one that best suits your schedule. Each workshop will be a little different depending on the pace and direction the group would like to go in. EACH WORKSHOP HAS EXTREMELY LIMITED AVAILABILITY! This is to ensure that each session stays small, personal, and intimate. Allowing Chef Joe to troubleshoot any problems you might come across in your pasta making journey. Egg Dough The filled pasta making lessons will begin with a quick demonstration of a great all purpose “cacio e pepe”, whipped ricotta filling. And then it’s all about the dough. We will spend time learning how-to roll and stretch dough by hand with a rolling pin, and how-to roll and sheet dough with a pasta sheeter/machine. The workshop will focus on a variety of egg-dough made shapes, think - ravioli, casoncelli, scarpinocc, tortelloni, and caramelle. This is what is going to make each lesson unique - and will cater to the interests and questions of the group. Finally to finish the afternoon, we will walk through making a perfect pesto! This is perfect for ALL-SKILL LEVELS. Please note - this will be hosted on a live and private Google-Meet video conferencing room. Everyone is encouraged to turn on their video, unmute their microphone, make pasta & friends. Egg Dough
Prior to the lesson, you’ll receive video links to Chef Joe making the dough with a stand mixer and by hand. You’ll have a personal guide through the entire dough making process. Rolling out pasta dough by hand is a laborious process - but one with very satisfying ends. Get out your rolling pin, because we are going old school during this lesson. Chef Joe will demonstrate how to use a mattarello (italian rolling pin) for sheeting pasta.
Cacio e Pepe Pasta Filling
One of the secrets to a good filled pasta is a great pasta filling. Learn the recipe and technique for a creamy whipped ricotta and black pepper filling. Also included are recommendations and guidelines and for extra additions and alternative recipes.
