Ok, ok, ok. I hear you. I hear all of you. There are a lot of people out there, for whatever reason, unable or unwilling to eat gluten. Well, the time has come to spend the afternoon learning, dissecting, and talking about gluten-free pasta dough.
BEFORE YOU GLUTEN EATERS CLICK AWAY! This class will also focus on a fresh summer tomato pasta sauce. It’s the end of summer, and the one time of year that it is acceptable to use fresh tomatoes instead of canned tomatoes for sauce. (So at the least, sign up, make your regular pasta dough (I’ll even share with you my recipe) and make the sauce and finished dish with us).
I'm even including my Cashew e Pepe (vegan cacio e pepe) recipe as well!
There is a limit to what kinds of pasta you can make with gluten-free dough, but rest assured - at the end of the afternoon you’ll be left with a bowl of satisfying and warm pasta.
Please don't hesitate to reach out to Chef Joe with any questions you may have throughout your pasta journey! Upon reserving your space, you will receive a private link to the video and recipe cards.
KEEP IN MIND THE LIVESTREAM WILL BE RECORDED AND CAN BE VIEWED AT ANYTIME AFTER THE LESSON (Perfect, for if you are unable to make it at the scheduled time)

Gluten Free Dough
There are a lot of gluten-free options out there when it comes to pasta. Some better than others. In this case, we will be making our own in real time. I’ll share my best practices and tips for overcoming this tricky situation.
Early Girl Tomato Sauce
Using fresh tomatoes (ideally that you’ve just picked up from your local farmer’s market) we will transform this simple ingredient into a mind-blowing, yet simple, expression of summer!
Once you learn this technique, you’ll be looking forward to summer every year, just like me.
Handmade Pasta 101
Dive into the world of pasta with one of the country's most celebrated and influential pastaios and learn first hand the basics of pasta making. This lesson is for all skill-levels, and requires no special tools or equipment. Get ready to learn the tips and tricks from one of the best.
Understanding the why's and how's of a recipe are far more important than a list of amounts and ingredients. A recipe is merely a road map, passed from one cook to the next. What makes a recipe special is the personal touch that each cook imprints on it to make it their own. Having the knowledge of "why" you do something, instead of just reading a recipe card will give you the confidence and skills to carve your own path in the kitchen.
At the end of the lesson, you will feel confident enough to take this recipe and put your own touches on it, truly making it your own.
Cashew e Pepe
There are only a handful of dishes as ubiquitous as the Roman classic - “cacio e pepe”. A marriage of cheese, black pepper, and pasta water, resulting in a rich and creamy emulsion unlike any other.
Chef Joe is sharing his reinvented recipe for the classic sauce, using cashews as a base, resulting in a rich, velvety, VEGAN, sauce that won’t even have you missing the cheese.
