Is it a yam or a sweet potato? Which is which? What actually is the difference? Are they the same thing? Can they be interchanged? These are some of life’s most difficult questions to answer…. well, not really, but still a little confusing for both the home cook and the professional chef. Is it really November without turkey? One of the most comforting combinations of the season is turkey and sweet potato, so why not turn it into pasta?! The holidays are among us, and the weather is changing, signaling our inner clock that tells us it’s time for comfort food. I'm revisiting this lesson and recipe for because it just might be my favorite thing I made in all of 2020. I'll teach you how to make a perfect, fluffy, pillowly, bright orange, sweet potato GNOCCHI. Sweet Potato Maple & Mascarpone Gnocchi
"Gnocchi' -' one of the classic Italian dumplings. Dive into the world of pasta with one of the country's most celebrated and influential pastaios and learn first hand the basics of pasta making. Get ready to learn the tips and tricks from one of the best. This class is designed to allow guests to prepare the recipe in real-time with Chef Joe! Pour yourself a beverage and get ready for the ultimate cook-along. Prior to the lesson, you'll receive an ingredient list and simple instructions for starting the potatoes. As the class begins, you'll be able to make gnocchi live with Chef Joe from start to finish. This lesson is for all skill-levels, and will be using a food mill / potato ricer (However, do not worry, Joe will go over good substitutions for all of the tools and equipment throughout the demonstration).
Turkey "Bolognese"
As with most iconic dishes, you will be hard pressed to find an “original” version, or the “classic”. The same goes with bolognese. There are almost as many versions of bolognese as there are families in Italy. A new take on the traditional Thanksgiving Turkey. In this lesson, Chef Joe will share the secrets and his interpretation of this signature and soul-warming dish using holiday flavors and spices, that will become a favorite recipe year round.
