Jon Darsky is the chef/co-owner of Del Popolo, a naturally-leavened, wood-fired pizza restaurant. A lawyer by training who became a professional basketball scout, but found his calling as a pizzaiolo at Flour + Water. For his brick-and-mortar adventure, he found a chef de cuisine in Jeffrey Hayden, who has worked at wd-50 in New York, Alinea and Blackbird in Chicago, and Boot & Shoe Service in Oakland.
