Sardinia, unlike many regions of Italy, is still for many a mystery. It is Italy's second largest island, however it has one fifth of the population of Sicily.
Unlike Sicily, Sardinian cuisine is much more strongly-influenced by the shepherding culture and therefore has a strong presence of Sheep and Goat's milk cheeses as well as meat-based dishes.
I am American but have lived in Sardinia since 1990 and have, over the years, learned the Sardinian way and artisan traditions, an experience which eventually led me to create a Sardinian artisan food and tour company.
On this experience, I will share with you my knowledge of the island, the cheese culture and after a virtual cheese tasting, we will make two of my favorite pastas with a very special ingredient, Sardinian Red Tuna.
It is a pasta where the ingredient is king and you do not have to be a chef to make it.
