On this experience, with masterful movements and hands, Maria will transform water, salt and Semola into an infinite geometric intersection of paper thin strings-the strings of God. Today you will go on a journey and discover an ancient art that tells the story of a culture and a community, an art which risked extinction. The pasta is exclusively hand made and there is no particular secret other than “hand memory”. The pasta is pulled 7 or 8 times until you obtain criss-crossed, transparent, razor thin strings. It is not an easy process. The dough has to be elastic and soft. The strings are then placed on large round wicker base and dried in the sun. Su Filindeu is not only a pasta but a sacred rite. Mastery of this art can take years, so what are you waiting for!
