ChefsFeed Experiences cooking classes are a chance to virtually connect with chefs and bartenders, learn simple cooking tricks and tips, and most importantly, support the culinary community through this difficult time. 100% of ticket sales go directly to the host or their business to help support the hospitality industry. --- The Shearing of the Sheep is an age old tradition of the Sardinian shepherd! At the end of May, each Shepherd invites his friends and they spend the day shearing sheep. After a morning of work, the host offers all shepherds a traditional meal. Appetizers are prosciutto, salsiccia and cheese. The first course is “Pecora in Capotto” or boiled sheep with potatoes, carrots and onions. And, a shepherd’s party is not complete without a proper offering of roasted suckling pig and other delicacies such as Casu Marzu, our traditional cheese with worms. This year we do not know how we are going to shear all the Sheep but we will have a party just the same at the Cuscusa organic dairy farm and vineyard. Come with us and take a journey into the Sardinian shepherd’s most intimate annual festival. We will not only learn how to cook a traditional Shepherd’s meal, but we will explain some of the most important concepts concerning the ancient traditions of shepherding: the symbiosis between the shepherd and herd, and one of the most intimate journeys they make together, “La Transumanza”, the annual moving of the herd from the mountains to the plains and back. On this journey, Michele Cuscusa, a shepherd born into this tradition, will explain the importance of this rite and one of the principal products originating from it, Fiore Sardo. There will be a lot of Italian language on this live stream but fear not! I will translate, moderate, and answer all questions. Join us on Saturday, May 23, to follow along on this adventure! And make sure you have a glass of Cannonau and a slice of Pecorino at the ready!
