40% of the US food supply needlessly goes to waste. We're doing something about it - and so can you. Join us as Chefs Lauren Chandler, Chris Bailey, and Kirk Mustain craft an inventive 6-course, veg-forward tasting menu showcasing the untapped potential in underused foods. Nathan Gerdes of La Moule will serve a salvage cocktail hour (6-7pm), then we'll dine al fresco in our dumpster dining room (salvaged wood from The Rebuilding Center). All profits donated to Urban Gleaners, Portland.

Every course we make features inventive and delightful uses of ingredients that would have otherwise gone to waste, from broccoli stalk slaw to carrot green pesto to pickled kale stems and beyond.
