Please join me on June 23rd for the latest "Cocina Casera Poblana," an exclusive series of pop-up dinners in Portland exploring the unique cuisine and flavors of Puebla, Mexico.
I am Fernando and I will be your host and chef. As owner of Holy Mole food cart, which was awarded the "Best Food Cart" by Willamette Weekly, I will be preparing a six-course meal inspired by Puebla's indigenous and Mediterranean culture.
It will be an educational evening of unique, native dishes that display hints of Spanish, French, and Arab influence while being rooted in thousands of years of Mesoamerican culture and cuisine. Space is limited.

Pozole Blanco Itzocan-Style

A pre-Columbian soup made with organic corn, purple cabbage, onions and spices.
Taco Dorado
Small Plate
Organic corn tortilla filled with steamed potatoes and lightly fried, topped with cabbage, cotija cheese, sour cream and salsa.
Enchiladas de Picadillo Dulce

Organic corn tortillas wrapped around ground pork, almonds, raisins, apricots, apples, pears, spices, dipped in guajillo salsa and topped with cream and cotija cheese.

Mexico's national dish made with chiles, spices (including gluten-free cocoa) simmered to a rich sauce. Served with rice.
