Discover American baking through the Japanese lens with extraordinary baker Kei Yamaguchi of Kyoto, Japan. Kei will teach us how to:
--> Make a traditional sweet bean filling known as anko with adzuki beans and local bean varieties
--> Make shortcake biscuits with superpower ingredient macha (green tea powder).
We’ll assemble Japanese shortcakes, dig in, and leave with the know-how to make our own anko and macha delicacies. The class includes light snacks. BYOB or to share!

In class, we will make biscuits with local Oregon-grown wheat flour. I will showcase how to make anko with both adzuki beans and beans grown by local farmers.
