I'll be teaming up with Jennie Plasterer at her restaurant Kitchen 17 to make an exciting 7 course meal to bring in the New Year! We'll be featuring blini with kelp caviar, our housemade burrata and bread, oyster mushroom calamari, vegetable fritters, a choice of French onion OR cauliflower vadouvan soup, a caesar salad OR winter caprese, bucatini with truffle mushroom bolognese OR a seared polenta cake with gigante beans, AND we'll be featuring a choice of desserts as well.

Blini with Cashew Creme Fraiche and Kelp Caviar
We'll make a yukon gold and buckwheat blini, topped with our cashew creme fraiche, and a bit of kelp caviar and dill
Cashew Burrata & Housemade Country Bread
Just recently we were able to make vegan burrata! I'd always considered burrata to be the ultimate soft cheese, as it is a mozzarella that has a creamy, rich, not-quite-set filling, encased in a stretchy, more formed mozzarella shell. It is solid on the outside, and soft on the inside making it eminently spreadable, and totally addictive. We'll drizzle nice green olive oil over it, salt, pepper, and serve it with our house baked bread.
Oyster Mushroom Calamari and Vegetable Fritters

We make a really fantastic fried oyster mushroom calamari, and serve it with a fermented pepper aioli. We'll also be making delicious vegetable fritters to serve with our housemade pepper jam.
French Onion Soup OR Cauliflower Vadouvan Soup

For our French onion soup, we caramelize onions for 8 hours, deglaze them with Champagne, and serve it with our rich vegan stock infused with herbs. Then we top it with our toasted homemade bread with melted cashew cheddar over the top. (GF if you leave off the bread) The cauliflower vadouvan soup is a delicious bisque, topped off with roasted cauliflower florets, and vadouvan oil. (GF)
Smoked Beet-Cashew Mozzarella Caprese OR Caesar Salad with Smoked Tofu

We make a cashew mozzarella and serve it with smoked beets like a traditional caprese salad with basil, olive oil, and balsamic. (GF) OR We'll make a fantastic caesar salad with baby romaine, julienned carrots, and topped with smoked tofu. (GF)
Bucatini with Truffle Mushroom Ragout OR Seared Polenta Cake with Gigante Bean-Tomato Ragout with Brussels Sprouts
The bucatini will be tossed with a rich, truffle-infused mushroom ragout, and topped with parsley, chives, and a grating of our housemade almond parmesan. OR You can get a seared polenta cake served atop a stew made with gigante beans, tomato, and seared Brussels sprouts (GF)
Sandi Swiss' Chocolate Silk Turtle Pie
Chicago's very own gluten free baking extraordinaire and organizer of Vegan Mania Sandi Swiss will make her delectable chocolate silk turtle pie to finish off your New Years Eve feast!
