We're going to be making a ton of dishes, all vegan, that will make for an amazing Easter dinner. We'll feature deviled potatoes 2 ways, roasted asparagus with hollandaise, sesame crackers, and citrus, phyllo wrapped spinach with 4 vegan cheeses, a ravioli filled with fresh artichoke and ricotta with lemon, sunchoke puree and lemon oil, and a delectable carrot cake for dessert.

Deviled Potatoes 2 ways
Appetizer
We'll make a very traditional deviled potato just as you make a deviled egg, and top it with paprika, parsley, and kelp caviar. The other Deviled egg will be made with smoked eggplant bacon, and cashew sour cream.
Asparagus, Hollandaise, Sesame Cracker, Citrus
Small Plate
We'll blanch the best asparagus we can find, serve it with our rich vegan hollandaise, dehydrated black umami sesame crackers, and
diced citrus segments.
Phyllo Wraps, filled with 4 Vegan Cheeses
Small Plate
We'll wrap 4 vegan cheeses in phyllo, bake them, and serve them with a wonderful Chermoula dipping sauce
Artichoke-Almond Ricotta Ravioli
Entree
We'll fill our own fresh vegan pasta dough recipe with artichokes, ricotta, herbs, and serve it over a creamy sunchoke puree, drizzle it with our rosemary-olive oil, add fresh herbs, and top it with our freshly grated almond parmesan.

Dessert
Cake and Jam is the new pastry outfit started by Jaime Podgorny of Fritz Pastry fame, and we're happy to have her make an incredible version of carrot cake for this special dinner. Expect something tasty and fun, as she's ben a gem to collaborate with.
