Apparently, it's now summer in Chicago, and we'd love to honor it with a fantastic Summer Solstice Vegan Dinner! We'll be making for you some fantastic Caprese Skewers, a Moroccan-inspired Beet Tartar, a Grilled Peach Salad with fennel confit and pecans, a whole braised artichoke with smoked lentils, buckwheat, and chermoula, as well as a delectable Chocolate Strawberry Cream Cake from Mindful Baking! Come join us, as we usher in summer, and make it fantastic.

Caprese Skewers
Small Plate
We'll turn the caprese salad into skewers using cherry tomatoes, cashew mozzarella, and fresh basil. Drizzled with bright green arbequina olive oil, balsamic reduction, and Maldon salt.
Beet Pate with Carrot Yolk
We'll season our beet pate with urfa chile, olive oil, and sumac, top it with our spherified carrot 'yolk,' and serve it with freshly baked crostini.
Grilled Peach Salad
Small Plate
Chicories, champagne vinaigrette, fennel confit, pecans.
Moroccan Artichoke
Whole artichoke trimmed of its tough parts, and slowly braised in a rich seasoned broth until tender. Served with smoked lentils, buckwheat, whole roasted cauliflower, parsley, preserved lemon and saffron aioli. This is whole vegetable cookery at its finest.
Mindful Baking Strawberry Chocolate Cream Cake
Whenever I eat a gluten free dessert, I think 'this is very good for a gluten free dessert.' Diana of Mindful Baking makes desserts that make me think it is a good dessert, in any setting, under any conditions. We've both worked in some 'fancy restaurants,' and her pedigree shows, as anything she's ever made, that I've had, is 100% bulletproof. She's made pastry for some of the most discerning restaurants in Chicago, and she upholds those same standards here. This will be tasty.
