We're very excited to make many different vegan cheeses, and we're going to celebrate this fact with some fantastic produce! Come try our burrata, a refreshing cantaloupe, cucumber, and fennel salad with macadamia nut cheese, our famous arancini di riso, some delightful manicotti filled with spinach, almond cheese, and served with sprouted lentils and blistered cherry tomatoes, as well as a delectable candy cap mushroom cheesecake. We look forward to feeding you!

Cashew Burrata & Housemade Country Bread
Appetizer
Just recently we were able to make vegan burrata! I'd always considered burrata to be the ultimate soft cheese, as it is a mozzarella that has a creamy, rich, not-quite-set filling, encased in a stretchy, more formed mozzarella shell. It is solid on the outside, and soft on the inside making it eminently spreadable, and totally addictive. We'll drizzle nice green olive oil over it, salt, pepper, and serve it with our house baked bread.
Arancini di Riso
Appetizer
We fill the arancinis with our housemade mozzarella, fry it in bread crumbs, serve it over a rich tomato sauce, and top it with fresh basil.
Cantaloupe, Cucumber, and Fennel Salad
Small Plate
I love ripe melons, and they'll be especially tasty with several different preparations of cucumber and fennel! We'll serve it with rich green olive oil, fresh mint, and cultured macadamia nut cheese.
Manicotti with Spinach, Almond Cheese, and Cherry Tomatoes
Entree
I remember baked manicotti from my childhood, and I'm happy to make a grown up (and vegan) version! We'll fill them with a rich spinach, onion, and housemade almond cheese mixture, and serve them with sprouted lentils, blistered cherry tomatoes, and our freshly grated almond parmesan!
Candy Cap Mushroom Cashew Cheesecake
Dessert
Candy cap mushrooms have a sweet maple flavor to them, and are actually primarily used in desserts in many fancy restaurants. We'll be using them to make an excellent cashew based cheesecake with a pecan crust. This probably sounds a bit crazy, but when you've had candy cap mushrooms, it's difficult to think of it being used in a savory preparation. Surprise yourself! This dish will be a hit.
