Many vegans had a hard time giving up cheese, and some still miss it. For me, it was always seafood! Not-fish-standing us sparing the reel for this meal, we're going to make a lot of fun dishes that reference classic seafood dishes! From lox, to caviar, sashimi, to pickled herring and lobster mushroom risotto, I'm very excited for this dinner!

Rice Cracker Canapes

Puffed rice cracker topped with smoked carrot lox, micro greens, and kelp caviar.
Trumpet Mushroom Sashimi
Small Plate
We'll slice, score, and marinate trumpet mushrooms so that they become quite tender, and serve them with avocado over a salad of shredded daikon with a yuzu-kosho vinaigrette, and top it with grated ginger and horseradish.

We make a fantastic sprouted rye bread using wild-yeast culture, which takes 6 days to make! Enjoy it with our pickled eggplant 'herring,' red onions, capers, and microcress
Lobster Mushroom Risotto
Entree
We'll make risotto using a chardonnay green garlic broth, and serve it with delicious lobster mushrooms, blistered cherry tomatoes, and nasturtiums from our garden.
