We're creating a fun Americana menu featuring Oyster Mushroom Po' Boys, a rich Okra Gumbo, Long Cooked Greens, Blackeye Pea Salad with Eggplant Bacon, Beets with Citrus & Walnuts, a refreshing Ginger Lemonade, and Mindful Baking Sweet Potato Pie! None other than Stephen Muller will be bringing the bluegrass with guitar, dobro, and vocals to make this a festive and fun night in our little cafe. We'll keep you refreshed with our bottomless ginger agave Arnie Palmers, garnished with a bit of mint!
Oyster Mushroom Po' Boy

We love frying up oyster mushrooms in a a seasoned chickpea batter, and they sit beautifully with tomato, lettuce, and our remoulade sauce in crisp French bread to make a tasty 'po boy sandwich
Black-eyed Pea Salad with Sweet Fermented Peppers and Eggplant Bacon

We'll cook up rich black-eyed peas, chill them, and toss them with finely chopped vegetables, fermented peppers, and a bright eggplant bacon vinaigrette
Long Cooked Greens

We'll slow cook greens for several hours with garlic, rich olive oil, and sea salt, then lightly dress it with fresh lemon for a little lift
Chiogga Beets with Citrus, Walnuts, and Cashew Crema

We love beets, especially chiogga beets, and will turn them into a delicious salad with fresh citrus, toasted walnuts, cashew crema and fresh herbs
Okra Gumbo w/Wild Rice
Entree
A classic okra gumbo served up with our mixture of Japanese Haiga Mai & Wild rice, scallions and file powder. We'll start it with the 'holy trinity' of cajun cooking, onions, celery, and bell peppers. We'll add a lot of garlic, some seared okra, a long cooked roux, a rich stock, and 8 different herbs and spices. Then top it off with a mix of white, brown, and wild rice, topped with scallions, parsley, and file powder. We don't overcook the vegetables, so it's still bright, but very hearty.
