This dinner involves a lot of (mostly) French dishes to make a fantastic meal! We'll have our signature burrata served in endive with radishes and saffron oil, a French onion soup, a warm (sous vide) pear salad with charred citrus, cultured cashew blue cheese, and toasted walnuts, a Lions Mane and Oyster Mushroom 'Bourguignon' featuring local Four Star Mushrooms, a Chocolate Raspberry Tart with Espresso Meringue AND a croissant for you to take home with you! (or not). Not quite French, but French Nouveau! Come join us...

Warm Cashew Burrata served in Endive with Radish and Saffron
Appetizer
We'll serve our cashew burrata in Belgian endive, topped with finely diced radishes, sea salt, saffron oil, and herbs.
French Onion Soup
Small Plate
Onions slowly caramelized for 5 hours, deglazed with Champagne, and then cooked with an umami rich broth made from kombu and shiitakes.
Topped with a crust of bread and melted cashew cheese.
We've fed this to omnivores, who swore up and down, it tastes just the same as a French onion soup you'd find in a French brasserie.
Warm Pear Salad: Charred Citrus, Cultured Cashew Blue Cheese, Lettuces, Walnuts

We'll make sous vide warm pears, toasted walnuts, zesty cashew blue cheese with lettuces and a tarragon vinaigrette.
Trumpet Mushroom Sausage Bourguignon
Entree
This is a classic French dish we're going to veganize just for you.
We'll use a red wine reduction sauce with mirepoix and garlic to braise Lions Mane and Oysters grown for us by Chicagos very own Four Star Mushrooms, and serve it with herb braised potatoes, carrots, button mushrooms, and pearl onions to make a very refined, veganized, classic French dish dotted with smoky eggplant bacon and fresh herbs.

Our friends at Mindful Baking make and amazing Chocolate Raspberry Tart, to which we'll be adding pomegranate sauce and Dark Matter espresso meringue!
