This dinner is obviously very inspired by Eastern European food! From liptauer cheese spread, to cabbage rolls, to the farmers-style cheesecake, this promises to be a very delicious seasonal raw feast.

Liptauer Cheese Spread on Sesame Crackers
Appetizer
We featured, and did a food demo, for this excellent spread at the annual Chicagoland Raw potluck this year! Liptauer is a classic cheese spread in Hungary that often incorporates vegetables into it. For this spread, we ferment sunflower and cashew seeds to make a rich 'cheese' and blend it with fermented peppers and onion. It's a very umami, rich, funky spread that we serve with our smoked sesame crackers.
Cauliflower-Apple Soup with Poppyseed and Rosemary
Small Plate
This is a velvety cauliflower and apple soup that has a touch of almond cream blended in, and is topped with a bit of poppyseed, rosemary oil and wild arugula.
Cabbage Rolls
Entree
Classic Eastern European cabbage rolls filled with sprouted lentils, marinated shiitake mushrooms, and sundried tomato. With it we serve beet sauerkraut, whipped cashew, and dill.
Farmers Cheesecake with Strawberry Preserve and Citrus
Dessert
A classic farmers-style cheesecake, only made with cashew, a sprouted buckwheat crust, strawberry preserves, citrus, and raw agave.
