Fancy Plants Catering is starting to make different vegan cheeses to sell to businesses, and it seems very appropriate to have a feast utilizing our different cheeses now that the weather is starting to turn cold! My friend Miyoko Schinner is a Bay Area chef that has been making and selling vegan cheeses throughout the country as well, and we'll be utilizing some of her different cheeses into the meal as well.

Miyoko's Alpine Cheese Fondue
Miyoko's Alpine cheese isn't found in stores, but she'll be shipping some to us for this dinner! The flavor is ideal for making fondue, for which we'll have roasted cauliflower, smoked potatoes, rye bread, and grilled scallions for dipping.
Seared Brussels Sprouts with Romesco and Almond Parmesan

We'll prepare deeply seared Brussels Sprouts seasoned with lemon, chile, and sea salt, and serve it with a rich romesco sauce, topped with our grated housemade almond parmesan.
Lettuces with Pear, Almond Feta, and Herbs

Sharp and crisp lettuces lightly dressed with a lemon vinaigrette, and topped with a generous portion of our housemade almond feta and herbs.
Lasagna with Smoked Lentil Bolognese and Cashew Mozzarella
A classic lasagna! We make our own noodles, and layer them with a rich tomato sauce, hickory-smoked lentil bolognese, basil, and our housemade meltable cashew mozzarella.
Cheese Service with Fruit and Compote
We'll be serving Miyoko's Vesuvius Black Ash and Winter Truffle cheeses with our herbed almond ricotta, crusty sourdough bread, sliced apples, nuts, fig chutney, and cherry preserves.
