My last name is Schuder, and I'm of German heritage. I grew up eating a lot of German food, but never truly appreciated it until I spent 10 years cooking and living in California, only to move back to the Midwest and brave another winter. Now I crave it with a vengeance. Not only do I have a newfound appreciation for fermentation, which we use to make our own sauerkraut, fermented pepper paste, sweet and spicy beer mustard, and pickled shiitake mushrooms, but also the soul of good German food.

Hearty Sauerkraut Soup with Housemade Smoked Mushroom Sausage, and Country Bread
Small Plate
This is a very good soup to greet you when you come in from the cold. We ferment our own sauerkraut, and let it age in jars for a few months to give it a mellower balanced quality. With this, we'll add browned smoked mushroom paprika sausage, onion, mushrooms, peppers, garlic, tomato, potatoes, and the flavors of caraway and bay leaf. We'll also give you our fresh homemade wild-yeast fermented country bread for sopping up the rich, smoky, paprika-laden broth.
Braised Cabbage Rolls with Whipped Cashew Sour Cream

We fill our cabbage rolls with sprouted and cooked lentils, pickled shiitake mushrooms, and sundried tomato. Then we serve them with whipped cultured cashew cream and a touch of dill.
Smoked Potato Schnitzel with Spaetzle, Creamed Spinach, and Beet Kraut
Entree
We'll use our homemade almond parmesan and breadcrumbs to coat a roasted and smoked potato, and sear it until golden brown. Served with creamed spinach, home-made spaetzle, our own beet-cabbage sauerkraut, and a bit of our housemade spicy beer mustard.
Cherry and Almond Cheese Strudel
Dessert
This was always one of my favorite dishes growing up! We'll bake preserved cherry filling and our cultured almond cheese into a flaky crust, and douse it with some powdered sugar. This is a dish I've been making for myself for the winter, and I'm happy to now share it with you!
