Fancy Plants Catering is starting to make different vegan cheeses to sell to businesses, and it seems very appropriate to have a feast utilizing our different cheeses now that the weather is cold! We'll feature several amazing dishes showing the diversity of what our vegan cheeses can accomplish.

Alpine Cheese Fondue
The flavor of alpine cheese is ideal for making fondue, for which we'll have roasted cauliflower, smoked potatoes, rye bread, and grilled scallions for dipping.
Seared Brussels Sprouts with Romesco and Almond Parmesan
Small Plate
We'll prepare deeply seared Brussels Sprouts seasoned with lemon, chile, and sea salt, and serve it with a rich romesco sauce, topped with our grated housemade almond parmesan.
Smoked Beet Caprese with Cashew Mozzarella
Small Plate
We'll roast and smoke beets, and layer them with our housemade cultured cashew mozzarella and basil. Drizzled with a bit of balsamic reduction, and bright green olive oil.
Pickled Jalapeno Mac 'n' Cheese, with Assorted Toppings
We'll serve the pickled jalapeno mac 'n' cheese that we'll also be featuring at the Chicago Vegan Mac Down! For this, we use organic durum wheat macaroni made from our friends Baia Pasta in Oakland, use our cultured and aged cashew cheese, and top it off with herb roasted bread crumbs. BUT! You also get an assortment of different toppings you can add as you wish, such as roasted broccoli, smoked seitan bacon bits, scallions, and more pickled jalapenos if you like it hot...
Preserved Cherry and Almond Ricotta Strudel
We'll make an excellent cherry preserve and bake it with our almond ricotta into a light, crisp strudel dough.
