In San Francisco, there is a garlic themed restaurant I was always amused by called 'The Stinking Rose.' I hear it is an over-priced tourist trap, and nothing is vegan, but I'm nevertheless enticed by the concept. I just recently fermented 60 cloves of black garlic, and really wanted to feature it in a dinner as well! We'll feature 4 different dishes that utilize garlic, garlic confit, black garlic, and green garlic, all in a balanced way, without being too heavy handed.

Daikon Radish Piccata: Green Garlic, Lemon, Butter, & Caper Sauce
Appetizer
We'll serve breaded and fried daikon radish rounds, served with a green garlic, lemon, butter, and caper sauce, topped with some fresh herbs and daikon sprouts.
Fancy Caesar Salad & Housemade Bread
Small Plate
We'll make a roasted garlic Caesar custard, served with romaine lettuce, pickled veggies, and smoked sesame crackers. Served with our housemade bread.

An al-dente housemade fettucini served with a garlicy fava bean-walnut pesto, pickled ramps, and topped with our housemade vegan parmesan.
Black Garlic Ice Cream, Ginger-Molasses Cookies

Garlic Ice Cream is famous in Gilroy, California (garlic capital of the US), and at the Stinking Rose in San Francisco. Garlic can be harsh though, and black garlic is very mellow, sweet, and has a maple-molasses taste that is almost nothing like garlic. We've been fermenting the black garlic for about 2 weeks, and the taste is completely transformed. We'll be making a sweet black garlic ice cream, and serving it with ginger-molasses cookies.
