Filipino cuisine may be meat-centric but the country has over 7000 islands, so it's not a total surprise that seafood is also abundant and predominant in certain areas of the Philippines.
I'm going to recreate some of my favorite seafood dishes growing up in the Philippines using modern techniques to intrigue your palette while keeping subtle Filipino flavor nuances.
