You get to sound fancy saying you have made a beurre blanc (it’s easy), you will roast mushrooms to get them golden and crispy and learn how to make that fish super yummy and flakey. You will need: Ingredients: Halibut, or bass or cod (a fish with some thickness to it, enough for however many portions you want to make) Maitake mushrooms (oyster mushrooms can also be used) Chives Unsalted butter for poaching Milk for poaching Olive oil (for mushrooms) Garlic For sauce: Unsalted butter (2 sticks) White wine vinegar 1/4 cup Dry white wine 1/4 cup Heavy cream 1/3 cup Salt I shallot Tools: Saucepan Whisk Strainer (for beurre blanc) Knife Cutting board Stockpot Skillet
