This series is, simply, my life in food so far. As a chef my training and travel has been Mexican, Vietnamese and Thai. It allowed me and Peter to launch the Latitude 15 pop-up series last year; combining shared flavors and techniques from earth's tastiest cross-section. In 2017 a commitment to hyper local ingredients has inspired us to deviate a bit. Those techniques are still the base, but ultimately this is about the place we live. We're thrilled to host this meal one Sunday every month.
