Les Locke was first drawn to craft beer and brewing at the age of 19 while living in Hawaii as a Marine. Developing a hobby into a craft over the course of eight years, Locke ultimately left Hawaii and the Marines and returned home to San Antonio, Texas. While attending college, Locke realized he wished to brew professionally and decided to move to Eugene, Oregon where he found his first break into professional brewing. For two years he worked as an unpaid intern, cellarman, and eventual assistant in Oregon. After finishing his undergraduate degree at The University of Oregon, he came back home to San Antonio and took a day job in economics with the Department of Labor. Once in San Antonio, Locke discovered that San Antonio had found its brewing legs again. After two years of assisting in all aspects of local breweries, Locke was called upon by Branchline Brewing to become their first Head Brewer and production manager. There, along with his experience in Hawaii and Oregon, he was able to develop a deep philosophy for beer stylistic guidelines. This past April, Locke helped bring a new concept to San Antonio’s historic Pearl brewhouse with the opening of Southerleigh Fine Food & Brewery. Southerleigh houses a custom manufactured brewery designed by Portland Kettle Works with a 15-barrel brew house, six serving tanks, and an extensive firkin/wood barrel-aging program. As head brewer, Locke ensured that Southerleigh set new standards in San Antonio’s evolving brewing scene. Locke is a member of the Master Brewers Association of America, the Texas Craft Brewers Guild, and the American Homebrew Association.
