The first thing I ever learned about Japanese cooking was dashi, from my Grandfather. It's the basis of so many Japanese sauces and soups, and it's used in kitchens across the world to create depth and add umami to dishes. We will go over dashi making, vegan dashi, miso soup, ponzu, and tsuyu sauce. We'll also cover different types of kombu, grades of bonito flakes, and more.
