To cook and serve in paper is what "en papillote" means. A delicious and healthy way to cook fish. The mix of aromatic vegetables evokes the distinct cuisine of the "land of smiles." Galangal, ginger, lemongrass, kaffir lime leaf and spicy peppers all have a role to play in this amazing dish. Served over a bed of golden rice pilaf.
