Ready for a healthy change? Check out Ayurveda - a holistic science of longevity from India that's emerging onto the culinary scene for 2017. Everyone has a unique energetic constitution, or dosha and eating dosha-specific foods bring about physical + emotional balance. Class discussion covers essential ayurveda principles and how to apply them so you can look and feel amazing. This will be followed by recipe demonstrations with handouts and a family style meal. Conclude with dessert + Q&A.

Lime-Ginger Kombucha
Beverage
A welcome apertif where I've added lime juice to Synergy™ GT's Classic Gingerade. Please note that Synergy's Gingerade may contain more than 0.5% alcohol from fermentation. The ayurvedic significance of this drink will be explained when the class begins. Feel free to BYOB for the main course.
• Spanish Meatballs with Spicy Romesco Sauce
Appetizer
This will be a passed appetizer to enjoy while we mingle and wait for everyone to arrive. I used ground beef and chorizo pork from Belcampo local butchery (Certified Organic Farmers and Animal Welfare Approved). Please let me know if you would prefer a vegan or vegetarian option at the time that you register. Also, please indicate if you have any allergies (Romesco Sauce contains almonds).
• Chickpea Chard Stew
Entree
We will make this main dish together and I will explain the ayurvedic rationale behind the combination of the ingredients and how it affects each of the "doshas". You will have the recipe to take home. It is a vegan dish of chickpeas and Swiss chard in a tomato broth with lemon, thyme, za’atar and paprika
• Minted Rainbow Quinoa with Sultanas and Pine Nuts
Small Plate
We will make this side dish together and I will explain the ayurvedic principles that apply as well as how the ingredients effect each of the dosha. You will have the recipe to take home. The dish is vegan.
Pomegranate-Dark Chocolate Coconut Treats
Dessert
I will make these in advance and serve them for dessert. They are lightly sweetened with maple syrup and are vegan.
Mint-Cardamom Tea
Beverage
This will be served with dessert as a digestive. It is vegan and does not contain caffeine.
Vegan Artichoke-Lentil Pate on Sweet Potato Crisps
Appetizer
Pureed artichoke hearts and lentils topped on baked sweet potato crisps. Organic, vegan, gluten-free appetizer. This appetizer is not pictured, but will be available.
