Preparing this menu in San Francisco means sharing my passion for exquisite Italian food with bold California flavors. The creation of this menu comes from the simple creation of outstanding flavors in the Italian cuisine. Ever since I was a kid, I eat focaccia. It was a snack, an appetizer, even an entire meal. To make focaccia, you need patience, because the best one slowly rises for 24 hours. Tonnarelli al Nero di Seppia is a variation of spaghetti pasta with tomatoes sauce and a hint of tasty Calabrian chilly. This pasta is also called Arrabiata, which means "angry" due to the spiciness. The costine di maiale (Pork Ribs) is a favorite dish of mine. The brining process ensures that the meat stays nice and juicy while slow roasting in the oven. And we couldn't forget, Tiramisu. One of my favorite Italian desserts. It comes together overnight, giving this cake its true flavor and aroma.

Tonnarelli al Nero di Seppia. They are a thinner type of spaghetti colored with cuttlefish ink. The beautiful black color has no flavor. It gives a Nice contrast with the Arrabbiata sauce. The Arrabiata is flavored tomato sauce infused bye sautee onions and Peperoncino Calabrese (Calabrian Chilly) and Parmigiano Reggiano.

Costine di Maiale. The dish is oven roasted Pork Ribs brined for 12 hours. This technique gives flavor and juiciness in the meat.
