Although its cuisine has a lot in common with Italian cuisine, Sicilian cuisine shows an outstanding culinary heritage with traces of all cultures that have existed on the island: Greek, Spanish, French and Arab. This succession of civilizations has created a rich and varied culinary tradition that Mamma Bucci will recreate for this unique culinary experience featuring seven flavorful courses and two iconic desserts of the Island of Sicily. Sicilian wines to pair will be available for purchase.
A slow-cooked ratatouille-like mix of eggplants, celery, onions, tomato, olives, basil, pine nuts, honey and extra-virgin olive oil, caponata is usually served cold or at room temperature. Most Sicilians think caponata is a Spanish dish!
BROCCOLI IN PASTELLA
A fritter made with broccoli, flour, and water and then deep-fried in olive oil. In Palermo, the fritters are sprinkled with a few drops of lemon juice and often used as a filling for bread rolls.
INSALATA DI ARANCE E FINOCCHI
A refreshing and delicious salad made with thinly sliced fennel and oranges sprinkled with pepper, salt and imported EVO.
Calamarata is a classic seafood pasta that got its name from the ring-shaped type of pasta that is used in this recipe sauteed with calamari, tomato sauce and imported EVO.
SWORDFISH ALLA SICILIANA!
Swordfish cooked in onion and tomato sauce with capers, basil, parsley, olives, thyme, oregano and cherry tomatoes. A specialty from the city of Messina.
PARMIGIANA DI MELANZANE
A vegetarian entree, Parmigiana is an iconic Italian dish made with a shallow-fried sliced eggplant, layered with mozzarella cheese, tomato sauce, basil, and imported Italian Parmesan and EVO, then oven-baked.
PEPERONI ALLA SIRACUSANA
A substantial, tasty side dish that smells of the mint of Sicily, made with peppers, mint, garlic, almonds, vinegar, and imported EVO.
BAVARESE AL PISTACCHIO DI BRONTE
Pistachio is the green gold of Sicily and Bronte is an ethnically small town located just a few miles from Taormina. The delicious mousse made with milk, eggs, cream, vanilla, flour and the unique flavor that only Bronte pistachio can give is served on top of a crispy layer of caramelized pistachios.
CANNOLI ALLA SICILIANA
Cannoli pastries are a staple of Sicilian cuisine. The cannolo, which name stems from the Greek "kanna", consist of tube-shaped shells of fried pastry dough, filled with a sweet, creamy filling containing ricotta and caramelized oranges.
