Curry is a melange of spices that come together to form a unique taste. Depending on what country or region you are in, these tastes differ based on their preparation. There is one common thread that unifies all curries - unapologetic boldness.
I have been lucky enough to travel far and wide and have tasted curries that have crept into my heart and soul to become some of my favorite meals. In this dinner, I'll be showcasing three versions of curry - all different and delicious.

Persian Curry

Braised Succulent Chicken in a Creamy Yogurt Curry Sauce with Cashews.
Tomato, Cucumber and Red Onion Salad garnish
Unique spices such as saffron, turmeric and rose add to the special flavor profile this Persian Curry is. Imported ingredients that are native to Iran are essential to the final dish. The strained yogurt adds a lovely tang that is the base of this curry.
All curries served with rice.

Spicy Red Curry with Crisp Vegetables, Tofu and Coconut Milk

Mortar and Pestle.
Two things this curry can NOT be made without. Nothing beats the hand pounded curry paste that only this ancient piece of equipment offers. Aromatics like galangal, keffir lime leaves, and lemongrass are essential in the final product. All this is brought together with a sweet coconut cream to balance the sweet and spicy elements.

Comfort food at its finest! Cardamon, apple, carrots, coffee. Just a few of the ingredients that go into this melange of spices. Topped with a crispy piece of Tonkotsu.
