Red rice is very commonly used in coastal Kerala, India. Red rice shares the same virtue as its peers(purple rice, black rice and brown rice) that makes them a healthy dietary choice. This rice is soaked, ground coarsely, mixed with freshly grated coconut and steamed. These rice cakes when paired with Sambar a lentil and vegetable based stew makes it a wholesome meal and yet very easy on digestion.
