South India is the area in India encompassing the states of Tamilnadu, Karnataka, Kerala, Andhra Pradesh and Telengana. This menu has been put together with the dishes that I enjoy from each of these States. These dishes by no means does justice to all the delicacies that each of the States has to offer. All fresh produce required will be sourced from local Farmer's market. Presenting to you all Food Tour of South India:

Punugulu with Allam Pachadi: Starter from Andhra & Telengana
A deep fried snack made with fermented batter of rice and lentil (urad dal) and spiced with onion and green chillies. Have these with Allam pachadi a tangy, spicy Chutney/sauce made with ginger and tamarind.
Thatte Idli dunked in Coconut Milk Rasam from Karnataka
You will get this dish for breakfast anywhere you travel in Karnataka. These soft, spongy cakes are made with fermented better of rice, lentil and flattened rice and steamed in Thatte (plate). Hence the name Thatte idli. It tastes heavenly when you dunk it in tangy, spicy rasam (soup) made with tomatoes and coconut milk.
Puttu with Kadala Curry from Kerala
Puttu means “portioned” or “make into parts”….These are made of ground rice and layered with fresh coconut and prepared in a cylinder shaped steamer and portioned into small cylinders. Chick pea Curry flavored with coconut milk is the traditional pairing for Puttu.
: Pineapple Kesari from Tamilnadu
A dessert served at many weddings in Tamilnadu. This is prepared with Semolina, sugar, pineapple and ghee (clarified butter), garnished with cashew nuts and cardamom.
