Bold Food and Fat Gold have teamed up to offer a 5 course modernist olive oil dinner featuring Fat Gold, a Bay Area artisan producer. Every participant will take home 500ml of fresh, recently pressed Fat Gold. Kathryn Tomajan will be on hand to lead an interactive tasting and unravel the mysteries of olive oil: the virgins, the phenols, the secret codes printed on labels. You’ll practice professional tasting techniques, explore the diverse flavor profiles and become a more discerning taster.

An olive oil washed gin Tom Collins cocktail! Fat washing alcohol allows much of the olive oil flavor to transfer to the alcohol, and then the fat itself is removed.
*There will also be an alcohol free version for those who prefer it. Please contact us to let us know if you would like this version.
Mushroom and parmesan Fat Gold salad

Smoked maitake mushrooms, thinly sliced Portobello mushrooms, celery, lemon, olive oil (solid and liquid) and parmesan whey foam.
Salmon mi cuite with coconut, olive oil, and pomelo kosho
Appetizer
Salmon mi cuite was one of the most popular dishes from the last Bold Food pop up dinners, so we will continue to serve it in March. The salmon is cooked sous vide at a low temperature but for a long time, yielding the perfect texture right between cooked and raw. The salmon will be served with a Thai coconut cream and Fat Gold olive oil sauce, and house made Fat Gold pomelo kosho.

16 hour sous vide duck leg cooked in olive oil, crispy duck skin, powdered Fat Gold olive oil, fennel cooked sous vide in olive oil, beets and oranges
Liquid nitrogen olive oil ice cream
Dessert
Olive oil ice cream cooked sous vide and frozen right in front of you with liquid nitrogen. You can help to make the ice cream! We will top the ice cream with a seasonal, house made orange syrup using the best of our seasonal citrus.
