Living in Copenhagen for over a decade, I learned how to make delicious food from the best and simplest ingredients, and for me, there's no better time of the year to let the ingredients speak for themselves than Spring. This dinner is the next installment of my seasonal Scandinavian pop-ups, and because Spring also brings the release of new wines, the talented folks at Revel Wines will be pairing wonderful wines to the meal.
