Hoppin' John with Sea Island Pea Gravy

Using heirloom Carolina Gold Rice, Sea Island Peas, and a house made pork stock - we re-create this low country dish always served on New Year's eve for good luck. If you haven't eaten Carolina Gold Rice, you're in for a treat. This rice was lost shortly after the civil wars after the emancipation of the slaves from West Africa that were brought to the low country for their knowledge of cultivating this rice. Carolina Gold Rice Foundation after years of research has brought it back.
Sweet Potato Purée with Pork Cracklins

This side dish is our rift on a dish that resulted after the southern tradition of lard making. After rendering pork fat for 12 hours, crunchy crackling is left. Folks would roast sweet potatoes and crush the cracklin’ on top. We whip our potatoes to creamy perfection.
